In 2013 I made an arrangement of "Schafe können sicher weiden" (Sheep may safely graze) from Cantata BWV 208 by Bach. I worked on it for 6 days making changes over and over again. I think this must be one of the most difficult pieces to arrange for the guitar, that I have ever tried!
